Abstract

Chaim Cohen visits Um El Phachem, an Arab town in northern Israel, and meets the restaurateur Abbas Nashat, owner of a popular restaurant called "Elbabur". He is baking knafeh (sweet cheese cake), and shows us the process of making goat cheese. Chaim Cohen then visits the coffee factory of Rafat Abu Shakra. He is cooking cauliflower with tahina and sumak, a salad of wild chicory and yogurt, pastery filled with spinach and cheese, beef neck stuffed with green wheat and lamb ribs.
