Abstract

The program guest is the restaurateur Chabib Daud, owner of the Arabic restaurant in Galilee "Azaba". He is cooking: roasted eggplant with rice and black goats milk, pukaiye (a typical Galile stew of zucchini with onion), yogurt and mint. He is also preparing a baked pita bread with wheat groats and vegetables, a majadera (rice with lentils), lamb testicles stew with tomatoes and okra, rice with egg noodles. For dessert: figs with sesame. A visit to Kibutz Dorot where garlic is cultivated. Paulo Zeligman explains the growing process of the garlic, showing the crushed garlic factory in the kibbutz and how to prepare garlic delis.
