Abstract

The 'navettes' ( shuttles) are cakes, eaten in Provence, at Candlemas, which are also consumed worldwide throughout the year, due to their celebrity.. The shuttles are like little boats that evoke the arrival of the bark leading Judea, Mary Salome and Mary Jacob to Saintes-Maries de la Mer in Camargue. Monsignor Roger Etchegaray, Archbishop of Marseille, evokes this charming picturesque gastronomic legend, along with Seinturier, Canon of the Abbey of St. Victor, the priest of Saintes Maries de la Mer, and Denys Colomb de Daunant, horse and bull breeder from Cacharel.
