Abstract

Spotlight on the manufacturing of traditional grinding mills. The mill comprises two superimposed circular stones, taken from the desert and shaped; the lower stone is fixed while the upper stone rotates to ease the grind; the ground grain is used in the preparation of bread or traditional dishes. The programme shows the manufacture of tools and baskets from reeds and palm branches, and the preparation of a popular Jordan dish "Errouchouf", with boiled grains and whey. This popular dish has a high nutritional value.
