Abstract

Giuseppe Licausi and his son Girolamo, managers of a company that manifactures barrels - a profession transmitted from fatger to son- explain the process of roasting the barrel, still obtained traditionally by using fire. This technique is used so that wood gives the wine its aromas, thus obtain a quality product. They explain the difference in taste obtained with steel or cement tanks. They explain the cleaning process of large barrels, where we get in to remove a layer of wood so that it regenerates. The wine is better whenwhen offered by small barrels, because they yield more odours, and the origin of the wood , according to the type of wine wanted, is very important. Evocation of the techniques of barrel manifacturing which has not changed over time: attention, skilled precision, barrels repair and maintenance and viniculture in Sicily which is one of the oldest in the world.
