Abstract

A journalist, in a television studio, speaks about the nutritional properties of the beans. In Sardinia, we follow a review and some interviews about the culinary specialty called "bottarga", from its extraction from mullets to dryness, with explanations of the techniques used. Images of bottarga suspended during drying phase and at the table in typical Sardinian dishes.
