Abstract

Garfagnana is a natural area located in the province of Lucca, in Tuscany, between the Apuan Alps and the Apennines of Tuscany and Emilia-Romagna. Accompanied by a farmer from Petrognola, we follow the preparation of "Garfagnino" the typical bread of the region made of potato flour .
