Abstract

Spices are the basics of traditional Moroccan cuisine. They are a subject of discussion in most homes and restaurants according to the dishes served . Some of these spices are sometimes used to cure some diseases such as diabetes. Some spices like Saffron originate from Taliouine whereas cubeb and' lsain Ettir' are rather from Marrakech; other spices are imported from African countries and need to be stored in dry places to preserve their freshness and effectiveness . Spices are also used for their colours in plastic arts and in carpet manufacturing.
