Abstract

Despite the modernity and the urbanization the city of Salé has known, it still conserves, in its antique town, traditions and lifestyle deeply rooted in history. Among these aspects is the traditional popular brick kilns. The program shows the role it has played in cooking loaves of bread, in spite of the fierce competition imposed by modern bakerie and the decreasing number of traditional kilns. The ancient kilns were built according to specific designs; they are composed of a main room at the entrance where the bread boards are put, the room walls are perforated to let light in, and on one of the walls is a hole used by the baker as a cash. These kilns rely on wood to cook bread.
