Abstract

Bread is a basic and essential element in the Moroccan consuming habits. The preparation of bread has gone through several stages; from the traditional stage, when women had to prepare it at home or send the dough to the traditional bakery nearby, to the the mechanization and modernization stage when the modern bakery supplies clients with many types of bread as well as a variety of cakes. This kind of bakery is found in big cities, whereas in the desert, women are still preparing bread in the traditional way, using the traditional oven.
