Abstract

This edition “Our food” is dedicated to the presentation of meals from Bizerte. The recipes that are proposed are: - Chiken njara. - Sweet njara. The njara is variety of "rechta" (tagliatelle), made from flour or semolina shaped into big balls laid to rest in open air, then cut, either with a knife or with a pasta machine, and it is steamed-cooked, finally. It is one of the traditional recipes of Bizerte, as the women of the town prefer elaborating the dough. Sweet njara is mixed with butter or olive oil, sugar and raisins (and other dried fruits). This is an ideal recipe for breakfast or the breaking meal (Shour) during the Ramadan.
