Abstract

Saffron is found mainly in the region of Taliouine and other regions as Taznaght and Ourika . The cultivation of this plant has begun for the first time during this century in Iran then moved to China and Andalusia . The producers of saffron are : Iran, Spain and Morocco . The cultivation of saffron requires fields and much labour .This is what explains its high price . Saffron has many medical benefits, it is also used in cooking and in perfume . The origin of its name comes from Iran . Saffron means yellow in Arabic .It grows underground and is harvested in october. It is dried in the shade .
